A Fun-Filled Fall: Pumpkin Cupcakes

Hey Guys! Another recipe! It's Saturday so expect posts today! This is a recipe for Pumpkin Cupcakes! I got the recipe here: http://www.laurainthekitchen.com/arch/pumpkin_cupcakes.html





Ingredients: 
1 cup of Sugar
1 cup of All Purpose Flour
1/3 cup of Vegetable Oil
2 Eggs
½ tsp of Vanilla Extract
¾ cup of Pure Pumpkin Puree
1 tsp of pumpkin pie spice
1 tsp of Baking Soda
½ tsp of Baking Powder
¼ tsp of Salt



Instructions: 

1) Preheat your oven to 350 degrees, line a 12 piece muffin tin with liners and set aside.
2) In a large bowl, cream together the sugar, vegetable oil, vanilla, eggs and pumpkin puree. Add the dry ingredients and mix just until everything is incorporated.
3) Using an ice cream scoop, fill the liners about 2/3 of the way full with the batter. Bake for 20 to 22 minutes or until when a toothpick inserted in the center comes out clean.
Let cool completely and frost with cream cheese frosting.

Halloween Scares: Cobweb Cookies

Cobweb Cookies


Ingredients:

cup Gold Medal® all-purpose or unbleached flour
1/2
cup granulated sugar
1/4
cup vegetable oil
1/4
cup milk
1/2
teaspoon vanilla

eggs
Powdered sugar
Step 1: 
Beat all ingredients except powdered sugar in medium bowl with electric mixer on medium speed until smooth. Pour batter into plastic squeeze bottle with narrow opening. Heat 8-inch skillet over medium heat until hot; grease lightly.


Step 2: 
Working quickly, squeeze batter to form 4 straight, thin lines that intersect at a common center point to form a star shape. To form cobweb, squeeze thin streams of batter to connect lines.


Step 3: 
Cook 30 to 60 seconds or until bottom is golden brown; carefully turn. Cook until golden brown; remove from skillet. Cool on wire rack.


Step 4:
 Heat oven to 325ºF. Bake cookies on ungreased cookie sheet 5 to 7 minutes or until almost crisp (cookies will become crisp as they cool). Remove from cookie sheet; cool. Sprinkle with powdered sugar. Store cookies in container with loose-fitting cover.

Halloween Scares: Peanut Butter Pumpkins

Peanut Butter Pumpkins

Ingredients:

bag (10 oz) peanut butter chips (1 2/3 cups)
1
can (16 oz) vanilla ready-to-spread frosting
1/4
teaspoon orange paste icing color (not liquid food color)
12
small pretzel twists or thin pretzel sticks, broken into 1/2-inch pieces
Step 1: 
Line cookie sheet with waxed paper. In 2-quart saucepan, melt peanut butter chips over low heat, stirring constantly, until smooth. Remove from heat. Stir in frosting and icing color until well blended. Refrigerate until cool enough to handle, about 1 hour.


Step 2: 
Shape mixture into 1 1/4-inch balls; flatten slightly. Use edge of rubber spatula to make grooves in each ball to resemble pumpkin. Press 1 pretzel piece into top of each for stem; place on cookie sheet. Refrigerate at least 1 hour before serving. Store in covered container in refrigerator.

Frankenstein Brownies

Ingredients:

box (1 lb 2.4 oz) Betty Crocker® Original Supreme Premium brownie mix
Water, vegetable oil and egg called for on brownie mix box
1
cup Betty Crocker® Rich & Creamy vanilla frosting (from 16 oz container)
4
to 5 drops neon green food color
2
drops neon purple food color

candy corn
24
miniature candy-coated chocolate baking bits
Betty Crocker® black decorating gel (from 0.68-oz tube)
Step 1: 
Heat oven to 350°F (325°F for dark and nonstick pan). Grease bottom only of 8-inch or 9-inch square pan with cooking spray or shortening. (For easier cutting, line pan with foil, then grease foil on bottom only of pan.) Make and bake brownies as directed on box. Cool completely, about 1 1/2 hours. Cut into 4 rows by 3 rows to make 12 brownies.

Step 2: 
Divide frosting between 2 small bowls, placing a little more frosting in one bowl. Add green food color to the bowl with more frosting and purple food color to second bowl; mix both until blended. Frost 8 brownies with about 1 tablespoon green frosting; frost remaining brownies with purple frosting.

Step 3: 
Decorate each brownie with 2 candy corns for neck "bolts" and 2 candy-coated baking bits for eyes. Use decorating gel to add pupils to eyes and draw mouth and hair.
